I have a sweet tooth. These healthy oatmeal cookies are sweet enough but they’re healthy. We add chia seeds and cranberries for texture. Chocolate chunks don’t overpower the oatmeal. And honestly, I think you should attempt to add chocolate to any snack recipe if you can!
We don’t add refined sugar to this recipe. Maple syrup is used instead. The peanut butter and pecans add a little protein. This recipe is easy to make and yields 24 cookies. Perfect for school lunches or a breakfast cookie!
I paired a couple of cookies with a green smoothie for breakfast during the week and was surprised I didn’t get hungry before lunch! When I make another batch, I’ll probably freeze some so I can grab them during the summer. Sometimes it’s just too hot in the summer for baking cookies but you really want a healthy snack!
